that's an omelette

they never clean their griddles so all that ancient bacon/sausage/etc grease imparts an unique flavor that you can't get at home.

Just cook some bacon in a pan, develop some fond, and then drain a bit of the grease but not all before you drop your egg mix in.

They mix in a little pancake or waffle batter in with the egg before they fry it up.

Use butter instead of oil, gives it more taste, also dont overcook them and continuously stir them
