Probably because it's useful to have people around who buy good wine and can make pricing and pairing recommendations to customers. Even if the superhuman tasting thing is bullshit, they've still tasted more wines than most people.

They still know their wine list better than you, and if you tell them your budget can make useful recommendations. Everyone can taste if a wine is good or bad. This is their job. I'm not going to sit there like an asshole and pour over their wine list for ten minutes. Sorry, they're still useful in restaurants. I never said I think they have magically sensitive taste buds.

I'm a Chef with a Sommelier certification. Obtaining one is a guaranteed raise in the restaurant industry, as are CEC and CMC certifications. Accolades = clout = earning power.
