i always use a ton of bell peppers for fajitas. green are always the cheapest.

I don't understand why people don't like them. What about green pepper ruins anything? It has a sweet/savory flavor that compliments meats and other vegetables very well, I love bell peppers.

Green ones are a little more bitter and less sweet but they're still good

took me 30 years to realize i just didnt like them. wtf. they have an odd bitter edge that doesnt help them at all, unlike say bitter chocolate.

Green bell peppers are great if you're using them along with onions, carrots, garlic, etc to make a flavor base for a sauce, stew, or braise, but they're not nearly as good raw as red, orange, or yellow peppers, and yellow/orange peppers don't stand up to cooking as well as green and red do.
