Carrots are seriously underrated. They're very cheap and most people either think of them as "bitter bits of coleslaw mix", "cheap vegetables I buy that are only good drowned in dressing and inevitably go bad before I eat them", or "component of making vegetable stock", but cooked properly, carrots can be delicious.

Even simply boiling, mashing, and buttering/seasoning them can make a world of difference. They also can be used to make a wonderfully creamy, mildly sweet base for a soup - try it for your next chili, it pairs well with tomato and adds a nice depth.

Agreed. They're nice because they can be used in so many different ways. They're good raw, steamed, boiled, roasted, grilled. You can use them in soups, to make stocks or sauces, etc.

Pureed carrot soup is such a delicious thing, too, and versatile. Sweet carrot soup with granny smith apple and cinnamon; spicy curried carrot soup; south-western carrot soup with cumin and roasted bell pepper; pureed carrot in chili, etc.
