Chinese hand pulled noodles.
Id love to make this but all I've found on it are mostly technique vids. I need a recipe for the dough. My guess is a high gluten dough using bread flour. But I've heard CAKE flour is the way to go. But WTF cake flour has a smaller gluten content than all purpose!

AP flour works fine; non-Chinese can't discern the difference of the final product. Pizza flour is good if you want to be anal about it.
As for the process of making dough, there isn't recipe per se... it's more like "slowly add cold water to a bowl of flour while stirring until everything incorporates no more and no less." Knead the dough very well; it will be kinda hard to the touch. Cover the dough with a damp towel, cover the bowl with a lid, and then let it rest at room temp for a few hours if you intend to make noodles thereafter or stick it in the back of the refrigerator for as long as you'd like (serious).
