I had KBS for the first time last night. I think it's overhyped but it was very good, dunno about $6.00 a bottle good though. Tonight I'm having Highland's Imperium stout with coffee, chocolate, and coconut and it's good as FUCK. The chocolate flavor is so heavy. Highland also brewed a double chocolate stout a few times that the same can be said for.

I've noticed the most renowned beers always tend to be prided on their overall balance more than anything else. Meme-flavored beers don't stand the test of time like classic, traditionally brewed beers do. Delirium Tremens is a perfection of it's style, and can understand someone charging 12 bucks for a pint of it.

I've been going to this "brewery" in town (and I put quotes because they don't brew anything.) that changes their beer every other day, and they always go with American/European beers.

The owner's a chill guy that always wants me to try the new stuff, so I figured I'd pick up some foreign stuff and bring that down for them to try.

Only issue is what the fuck do I bring? Mexican beer is out, because there's a large mexican population in town so we already have all their popular beer here.

I was thinking Asian, anybody have experience with beers from Asia? I've had a few Chinese and Korean beers, but that's basically the stuff they sell at Asian restaurants because it's basically water and anybody will drink it.

Earlier tonight I had a Fastback Racer X3 and an unfiltered Sculpin.

Didn't realize until I got home and looked it up that the Fastback X3 was so rare (only 2 entries on Untappd), but it was by far the best thing I've had from Bear Republic, and I'm generally a fan of their output.

As much as I don't want to like Ballast Point because of how overhyped they are right now, the Sculpin and Victory at Sea are both pretty decent, but the distributors do tend to overcharge (at least where I am) for kegs compared to comperable beers, and that always tends to translate to the consumer.

Well, beer has to sit a bit in the bottle. A belgian wit, you'll want to drink within a month or you start losing the flavor. A barleywine or imperial stout on the other hand will age nicely. The fucker that owns my homebrew supply store gave me a sample of a barleywine aged for 5 years in a whiskey barrel. Have you never done a vertical tasting? Aging bottles of high ABV beer is a pretty common thing with a noticeable effect. Generally makes the beer "smoother", there are all sorts of slow chemical reactions going on over time, and there is live yeast in there

Meanwhile in stuff like IPA it gets much worse over time as the best parts of the hop flavor fade away. Please drink a nice fresh IPA, and then one thats been sitting on the shelf for a year and tell me nothing is happening in that airtight bottle.

Yeast needs oxygen at it's initial stage. That's why you need to aereate the wort before adding the yeast. Papazian recommends it, but he's not as anal as Dave Miller who lashes you with a whip about aereation of the wort. I do a 5 minute shake of the wort prior to adding the yeast.

Wooden barrels are not airtight. That's the fucking point.

Barrel aging happens because of 3 different processes:
1) the barrel is not airtight, and it allows for some the barrel's contents to evaporate (this is called the "angel's share" in distilling), and it also allows limited amounts of air inside. These things change with weather and the seasons. As temperatures and humidity levels change so does the aging.

2) Flavors from the wood seep into the liquid. These flavors can be varied by how heavily charred (burnt) the inside of the barrel is. Charring the wood produces a caramel sort of taste because the natural sugars in the wood are caramelized by the heat.

3) Many times barrels are re-used from a previous aging. This gets additional flavor into your liquid from the residual wine, sherry, whiskey (etc) that was previously aged in that same barrel and soaked into the wood.

I make my own "bourbon barrel" aged sauces. Because I don't make enough to use whole barrels I have to cheat a little.

I use glass growlers (like some people use for beer). I put a little bourbon into the bottle to simulate what would have been soaked into the wood when re-using a genuine barrel. Then I stick a few of pic related into the neck and close it up. These are charred pieces of oak, usually called "infusion spirals". They're the same idea as how a bourbon barrel would be charred before it was filled with bourbon. You can get them from homebrew stores and are meant for flavoring homemade wine, beer, etc. Stick a couple of those in the growler with the bourbon, then top up with your sauce (or beverage). Then let it sit for a while. I use the heavily charred spirals since heavy charring is typical for a bourbon barrel.
