Glutamates, including msg, yes. For italian go anchovies. Parm rinds in flavor saches for soups and sauces make a world of difference. In asian, go fish sauce, kombu, shitake, bonito flake (my favorite). MSG headaches (AKA chinese restaurant syndrome) is an urban legend. Those who claim to get them fail to understand that salty as fuck takeout chinese dehydrates you which means headache/general 'itis'. Buy some crystalised msg from your local Asian food store and sprinkle some in with your eggs next time you make breakfast.
