Once it gets super strong tasting, you can make it into kimchi jigae

squeeze the bread and make sure it's okay to eat.
if you squeeze it and it returns to its full form, it's fine to eat.
but if you squeeze it and it stays in the shape of being squeezed, you better throw it out and buy some new bread.
this is also a way to test if bread is good at the market. just give it a good squeeze.
you might have to try a few loaves, but that's fine anyways because no one would want the bad bread. you're just making it clearer for them that it's bad and unsellable

It's fine. Kimchi is fermented and (ideally (and usually)) the "good" bacteria are out in enough force to inhibit infection by any bad bacteria.
Also kimchi is fucking GOAT.
