here a simple but incredibly tasty salad:

tomato
feta
dash of oregano
olive oil
balsamic vinegar

voilá

other one would be tzatsiki:
thin slices or ground cucumber
remove water
add salt, yoghurt and a dash of white vine vinegar

Sweet and sour coleslaw-

1/4 finely sliced or grated red cabbage
1/4 finely sliced or grated white cabbage
1 skinned and grated carrot
1/2 cup sliced green onion
3 tbs apple cider vinegar
2 tbs oil of your choosing (I like safflower for this, but olive works)
2 Tbs of white sugar OR honey
1 tsp black pepper
1 tsp celery seed
1 tsp dry or prepared mustard
salt to taste

Adjust sweetness as needed. Add or reduce cabbage to get the ratio of sauce to cabbage you prefer. Store in fridge for an hour before serving.

EXCELLENT will pork, and fried foods.

I love this stuff, but I add garlic and onion as well as the cukes.

I make my own yogurt, and whip up a batch every so often as a sauce to go with beef.

1 cup chopped cucumber
1/4 cup chopped white cabbage
1/4 cup chopped red cabbage
1/4 cup chopped green onion
1/4 cup grated carrot
1 clove minced garlic
1/4 inch piece of minced ginger
1 tbs sesame oil
1 tbs sesame seeds
1 tsp soy sauce
1 tsp red pepper flakes
1 tsp sugar
