Bought some raw beef sausage. What can I do with it?

i did this just today with merguez, for 4 servings:

-cook 500g spaghetti
-take 300g of sausages, make small meatballs
-fry in pan with 2 red onions and 2 garlic cloves. add chili powder, oregano, salt and 2 tablespoons of tomato paste. add juice of a half lemon and half cup of water
-add spaghetti, mix

Boil in beer and onions, 10 mins or so.
Strain out beer.
Return onions and sausage to pan.
Add unsalted butter
Brown off sausage, caramelize onion

Put in bun or serve with side of spaetzle.

Empty them out of the cases and squish the meat together with some light seasoning into 3 or so balls, into a pan on high heat squish these balls into patties, flip several times until nice and crispy, serve on a brioche with katsup, mustard sliced pickle and Monterey Jack cheese

Bake them in the oven at 350 for 20 minutes. Eat with garlic mashed potato, sauerkraut, and ketchup. This is a go-to meal for me during the work week when I don't feel like cooking anything complicated.
