The crumb of a loaf of bread is basically the structure of the air pockets within. Usually the rule is the higher the hydration (within reason) the higher the chance of having an open crumb. Lower hydration doughs tend to have a tighter more solid crumb, like that of sliced sandwich bread you find in the store.

Another thing that helps get an open crumb is not degassing your dough, or at least making sure you don't degas it too much when doing your folds during the fermentation process.

In other words, it's just something that makes the bread look aesthetically pleasing to the eye. Like pic related.

Crumb looks great. I wonder if you might know, the last time I made a 70% hydration dough with an 80% hydration starter, I ended up with larger holes at the top, but a denser crumb below. I used the Rubaud method of slapping the dough then folding for 3 hours every 30 minutes.
