So everyone should know about Keizo Shimamoto's Ramen Burger by now. Somehow he has kept the bun process/recipe a secret, and I am still trying to figure it out.
I came close to a great alternative once when I staged at a restaurant almost two years ago who had a ramen burger on the menu. I cooked them and even ate one but never got to figure out how they were prepped. I just know they were in cheap looking white plastic molds.
Supposedly the idea came to Keizo after seeing a Japanese pork sandwich with ramen 4 buns. Anybody know what that may be called or even better a recipe?
Another thing to note is Keizo says his buns arent fried, which is what everyone does.
Haz anybody any luck?

And this. Those were taken in 2013 so these may be an origina process.

I have never heard of a spaghetti pie before. You may be onto something there.

That appears to be Keizo in the background and while not necessarily "frying" the buns they are being cooked on a nicely lubed griddle.

There's a food truck in my town that sells them. Seems like a gimmick to me.

I just want to figure out a perfected bun recipe. I got ideas and I won't be putting a burger patty between it and it won't be round.

Quick browse about doesn't give any decent info, even Kenji's at Serious Eats was pretty pleb. My best guess for how they're getting that look is over cooking the noodles, then soaking them in beaten egg, draining and forming the 'buns' in molds and chilling them so they retain their shape for production
