to make wings for ourselves, we would dredge them in flour before frying them so the sauce would fucking cling to that shit. then it was a shot of g-butter, all franks, then we would have our own sauces one of which was a 3M scoville capsaicin extract, a few hits of that, then some fucking chili-garlic sauce. man those were the days.i loved running a kitchen just to be able to do shit like that.

Okay... i am from buffalo...and an amazing cook...and i love wings.

Frank's is the standard...though you can get away with using a variety of 'louisiana style' hot sauces like crystal, texas pete, cholula, etc. Never tabasco or habanero-based sauces. I use Valentina...inexpensive and vastly superior to the rest.

I use real butter...and so should you.
I do however understand why most restaurants use the fake shit.

Deep fry...very crispy. Never...and i mean NEVER fucking bake chicken wings.

Sauce immediately after frying...sauce draws into the skin.

Serve with celery and carrots and...
Blue cheese.
Always blue cheese.
Ranch is for southern trash.

Can confirm, have family in buffalo. When we visit some of my family ask for ranch with wings and get weird looks.

One place we all gather at once a year know us because of the ranch requests. Even the new FOH people are told about it since we usually roll up with 20-25 people same day every year.

Sucks since they have great BC and we usually need more.
