Made some nettle soup yesterday. Best soup to be honest.

That's not my photo but mine looks the same.
I fill a bucket with nettle tips (about a plastic bag worth). I get the tips and a few leaves down. Further down they are tough and woody. I wash the nettles about three times to get any insects off. The light green more delicate nettles are what you want. Dark green Ines are too tough and no sweetness.
55g butter
1 onion chopped
1 garlic clove minced
1 large carrot chopped
2 medium potatoes, peeled and chopped small
1/2 teaspoon celery seeds
1 litre chicken stock
2 tablespoons of cream
Salt + pepper
Pinch of grated nutmeg
Fry the onion, carrot, garlic and potatoes till soft but not browned. Add the chicken stock, salt, pepper, celery seeds and nutmeg and stir for a minute, then add all the nettles, put the lid on and leave for ten minutes. The nettles wilt down into the mixture. Remove from the heat and blend a bit then add in the cream and blend till smooth. You can add milk if you want the soup less thick, which is what I usually do when reheating the next day.
It tastes green. In my opinion like spinach crossed with the smell of freshly cut grass. Obviously avoid nettles next to roads, paths or areas that get sprayed with weed killer.
If you eat a big bowl it will turn your shit green.
