I once wanted to practice cooking something that wasn't shitty bland food like my mother typically makes (never seasons meat or makes anything from scratch other than biscuits). I decided to try making jasmine rice with green tea and honey ginger chicken, which I had never done before. When it was done it was one of the most flavorful things I had ever eaten at home let alone cooked, and my mother (who was extremely apprehensive that she could actually smell something other than cooking meat while I was preparing it and almost refused to eat it at all) loved it so much that she tried to make the exact same thing a week later and ruined the chicken with a fuckload of champagne vinegar(she thought that the vinegar was what made it good).

Russets, Yukon Gold, or Red? Unless they're really dirty russets it doesn't matter as long you wash them afterwards anyway.
