Trichinosis is extremely rare these days. In my country there's only been one case in the past 40 years and that was from home raised pigs.

You cook all minced food thoroughly since it's been essentially shredded, surface bacteria mixes back in, air bacteria gets stuffed inside it, etc etc.

General rule of thumb:

Beef - Surface bacteria
Chicken - Inside and outside
Pork - Surface bacteria
Lamb - Surface bacteria
Fish - Potentially inside, mostly outside.
Minced anything - Inside and outside
