I've been to the Benihana in Seattle. It was delicious. Fun to watch the guy flip things around. Kinda pricey, but it's more for a date or special occasion in my opinion.

They are franchises, yes. Wow, quick google reveals it costs 2million to build one. I guess that is why the prices are jacked up.
Food teppanyaki food cooked on a heated flat top griddle is interesting at most,could have areas as hot as a wok, but you realize there's no smoke, so yea, a real hibachi would have coals and offer some flavor from drippings plus smoke. A really yummy japanese restaurant will have negamaki and yakitori cooked over coals, not laid on a griddle, bleh. You can cook the latter at home, so why pay those prices? You're paying for the show. The sauces are easily bought, if you're addicted to those.

There are about 5 benihana knockoffs in my state. They're ok to go to sometimes, but they make me really uncomfortable.
I had a traumatic experience as a kid when one of the chefs made me try and catch a piece of scrambled egg in my mouth. Over and over again. Until there was no egg left because I was covered in it.
