The only purpose is spreadability when cold. And you pay plenty for that privilege, a brick of Philadelphia is $1.49 but the whipped version is at least double, or half the weight. Its not like cream cheese is THAT stiff, even when cold. And a bagel is usually dense enough to handle it, its not Wonder bread.
