chop the onion, saute in olive oil with salt and garlic powder until translucent. Add enough wine to cover onions (never cook with a wine you wouldn't drink), wait like 10 minutes, add tomato paste and stir, add chopped tomatoes and basil if you want. Put on low and simmer while you cook some pasta. My nonna's recipe.

This is the only bottled pasta sauce I genuinely liked but they completely reformulated it and took out the wine.

All I do is put olive oil in a sauce pan, then heat it high and give the tomato paste and garlic (half the tomato paste) a couple of minutes. Dump in pureed tomatoes, beef stock (half the tomatoes), pepper, a teaspoon of sugar and a fuck loads of "italian herbs" from a shaker.

Then i leave it simmering for as long as I can.

I make Bolognese using that as the sauce and it's amazing.

i fry up some mushrooms, 1/4 of a sweet onion, garlic, a slice (or if i'm feeling generous two or three slices) of fresh tomatoes, and sometimes 4-5 zucchini slices. then i tip in about 1 or 2 cups of prego depending on how much pasta i've cooked and basically just heat my ghetto sauce.

i hope in the future to use whole tomatoes for my sauce because i really like chunky stuff.

no more time intensive than almost anything else. Obviously making something for dinner by yourself is always gonna be more intensive than takeout or frozen or premade shit but c'mon that's always the case.

Here, I'll run you through my tomato sauce routine:

mince garlic, usually ~4 large cloves. Heat up a saucepan with some extra virgin olive oil. While this is cooking, puree 2 cans of tomatoes, San Marzano is preferable but any good quality tomatoes will do. Add the tomato as soon as the garlic is no longer raw (but before it browns), add salt to taste (probably a teaspoon or two but this really is up to you), some Italian herbs (basil, marjoram, thyme, oregano, etc). Bring it to a boil and let it simmer as long as you'd like, ideally more than an hour but at least 30 minutes. Add sugar to taste if you need to take the edge of the acidity off.

altogether you can be done in as little as an hour, with maybe 20 minutes of actual time devoted to cooking, another 10 minutes of cleanup. this isn't unreasonable for a sauce that tastes much better than store bought.

putting in the oven means waiting for the oven to heat up and cleaning the tin after its done. It's also more time to actually cook. I actually really like onions, just not in tomato sauce. Anchovies I've never tried, I might give that a go sometime. And no, I don't keep tomato paste on hand. It's a bit more of a specialty item than canned diced tomatoes are.

I mean I know you're just sperging out to pick a fight so you can get replies but c'mon man. Not everyone is gonna have the same priorities as you. The best you can do is explain what you do and why you do it so that if someone has similar priorities they can heed your advice.

Effort is hard. But roasting garlic is just peeling away the outer layers, cutting the top off exposing the cloves, putting it in foil, then putting salt and olive oil on top. 200 degree oven and forget about it. If you wait a long enough time, you have black garlic.

Sautee your veg in olive oil and butter (finely diced onions, peppers, carrots if you want) until it's caramelized and a nice fond has formed. Then deglaze with some wine. Before the deglaze, or after it's simmered off, you probably want to put your tomato paste, diced anchovie, herbs etc in so they can infuse with the oil and alcohol. Vodka is also good. You should have jarred anchovie fillets in your fridge, as well as a toothpaste squeezer of tomato paste.

Then it's a matter of putting your hand-crushed whole peeled tomatoes in. Guess you could just blend them for expedience, but hand crushing leaves a nice texture.

Squeeze in the roasted garlic (you should also be using fresh garlic with the aeromatics put in above), and keep simmering until the tomatoes have that cooked maillardy taste.


Those are the basics, add your own flair like spicy peppers, or brighten with a dash of your flavor of vinegar in the end, or whatever...
