What are your favorite very easy and fast dishes to make, especially ones that use very few pots/pans and don't make a mess?
I just moved into an apartment with an amazing location but the kitchen has tiny counterspace and no dishwasher. So most of my favorite dishes are a huge pain to make, looking for more very simple things to prepare.

I feel you OP, I have limited counter space and no dish washer as well. I try to stick to as many one pot or two pan dishes as I can but as a result I've gotten comfortable with chicken bakes, chilis, soups, and pastas and am looking for more variety as well. :(
you can make decent (not great) fried rice with one pot, one bowl, and one cutting board
>Boil rice to just-under-done (you can use rice that boils in bag to make this easier)
>while rice is cooking, chop veggies
>onion, carrot (very small), frozen peas, broccoli cut very small
>i get bean sprouts at my grocery store but those are optional
>put carrots and brocolli in a bowl, keep everything else on cutting board
>drain rice
>put same pot back on burner, use some peanut + sesame oil and heat high
>I cook onions and sprouts first, then rice, then carrots and peas
>dont forget the soy sauce. some people use fish sauce too but i cant get it where i live
>never stop stirring
>push everything to one side of pot and scramble one or two eggs on the bare side
>mix everything and serve
that's two good servings for like $4 where i live. fried rice is great for poverty food.

OP here, funny you should mention that, because fried rice has been another go-to of mine for the first few weeks I've lived here. I'm actually going to make it tonight probably.
Last time I made it I had a mango sitting in the fridge so I decided to dice that up and throw it in the fried rice and then put some Korean hot sauce on top. Turned out to be delicious.

Cut broccoli
Throw broccoli into baking dish
Add olive oil, salt, pepper
Bake 425 degrees for 15 minutes

Eat bread.
Eat vegetables right out of the bag.
Eat canned meat/fish.
Cook things in microwave.
Not exactly gourmet, but can still be pretty tasty.
