Have you ever owned cast iron? As long as you don't leave it out in the rain or run it through the dishwasher it's extremely low maintenance. I have a dirty pan sitting on the stove right now, I can show you how involved it is to clean it after use. I literally just run hot water over it and use a scraper and a nylon brush to get whatever out, then you just dry it off with a towel and lightly oil it. Hell, you hardly have to oil it.

Actually here's two of them I used to make breakfast earlier. The BSR skillet on the left is full of old bacon grease. I'll clean it as I had said. The right one is a wagner griddle I always use for eggs. I don't even need to clean that one, I just wipe it off after I use it and it's done.

Cast iron is basically the worst fucking cooking meme there is. I fell for it and wasted 4 dollars on a 12 inch lodge that someone else had fallen for and thrown in the trash, where most cast iron belongs. Some hobo had found it in the trash and sold it to me.

I use it to bake in from time to time. Shit comes out alright.

Back in my boy scout days, moving from a shitty Wal Mart Teflon pan to cast iron was wonderful. That heavy skillet was actually non-stick, heated evenly, and cleaned easily.

I have heard on /ck that cast iron is the lowest maintenance pan there is and that it can't be beat for how rough you can treat it.

I figure, if that is true, then this pan is perfect just the way Dan sold it to me.

If its lower maintenance than teflon and carbon steel, then I shouldn't have to season it again... i've never had to season my teflon pans - i just wipe them out with a paper towel when i am done cooking in them. If cast iron is EASIER than that then I am glad I won't have to do anything to this cast iron that Dan sold me, probably ever.

Seasoning works because oils fill up the pores in cast iron and form a blanket of slippery oil when it gets warm, and a congealed layer of protection when it's cold. If it gets soaped at all the oils break down and it must be reseasoned.

You can find new ones that are going to be more affordable. I can't even find an example of this online so I'm not quite sure what it is worth. I bought it at a "used" price but it's probably worth 3-4x a new one to the right collector. I've been told the right sugar kettles can be worth a few thousand. Actually, it depends on how much ingredient you were to place in the pot.

You see anon, the size of the pot is not what dictates the amount of food that is cooked. The pot can only allow for a certain amount of food to be cooked, it does not guarantee that the maximum amount of food will be cooked every time.

Cast iron is cool but truth be told it's a partial meme that really is only practical in the hands of an autist or someone that really appreciates the art of cooking. It's not so difficult to clean. You can just soak it with water and scrub it out with something. Lodge sells plastic scrapers that work well. You can just scrape it out with a metal spatula. It's cast iron. You're not going to hurt it much.

I bought a double dutch oven from lodge, where the lid from the dutch oven could be used as a skillet too. I got it for camping, since I wanted something that would heat evenly despite the uneven heat of a campfire, but I found myself using it more and more regularly. Depends entirely on what you're cooking. If you want to sear something (which CI is ideal for) then you'd use high heat just like you would with any other pan. Same with doing a stir-fry.

If you're doing something that requires a lower heat then you'd turn the heat down.

The heat setting on your stove generally doesn't change. What changes is the fact that CI is slower to react to temperature changes. It heats up slower and it also cools down slower.

There are a few crucial things to getting a good seasoning.

First you need to make sure your pan is completely dry. Before you season your pan, you want to wash it down and then completely dry it.

After that oil the pan and wipe it down, and then take a new cloth and wipe it down even more.

I put it in the oven at 200 at this point to preheat the pan. Sometimes I'll just preheat it on the stove top. Then I wipe the pan off again to make sure any pooling hasn't occurred.

After that you just need to bring the pan up past the smoke point of the oil you're using for at least 30 minutes. Canola oil should have a smoke point near 405. I usually use crisco/olive oil/whatever canola mix.

From bare metal I usually do 3-4 seasonings. After that I don't really reseason them outside of cooking. Sometimes when you season the pan it comes out with a dull pattern on the cook surface. This really doesn't matter, and it will even out after you season it again or after you just cook with it.

Here's a pic of the dull pattern that I described. It is completely normal.

You can also cook cornbread in a bare metal pan and it will turn out fine while also doing a layer of seasoning. I've used my pans to cook fries and stuff while I'm seasoning them.

Seasoning is oiling the pan and then heating it so that the oil polymerizes into a rock-hard shiny black coating.

A pan should never have a "congealed layer" on it. That's a fucking nasty dirty pan.

Absolutely. All you really need in order to season a pan is heat. You can season one on a grill, or even in a camp fire. I've also seen people season things over camp stoves and gas flames. You can find videos of every different technique with some googling.

Slice pork shoulder into half inch slices, powder with Magic dust:

1/2 cup paprika
1/4 cup salt
1/4 brown sugar
2 tea spoons ground mustard seeds
1/8 chili powder/flakes
1/8 cup cumin
1 tea spoon ground black pepper
1/4 cup garlic powder
2 tea spoons cayenne pepper
put in fridge over night.

Next day cut onions into thickish rings, tip the dutch oven on its side and start layering pork and onions. Make sure to take juicy onions, you need the liquid.
Put some bbq sauce and maybe some bacon on top and cook for three hours.
My 12 inch DO needs 9 briquettes underneath and 18 on top.

I just find the seasoning on my cast irons are much more stable. I end up reseasoning my carbon steel pa a with some frequency.

Not so much lighter as more ergonomic, longer handle, sloped sides. It makes more of a catch all than cast iron.
