- Saute veg and seasoning in pan (spinach, onions, mushrooms, garlic, bit of tomato, etc.)
- beat 3 eggs and pour over veg
- wait for egg to cook
- plate without folding
- maybe sriracha if I feel likes it.

- saute veg and cook eggs in separate pans
- pour veg into half-solid eggs
- mo' seasoning then fold and plate
