Why aren't you using them more often /ck/?
I didn't use them much until about two years ago. That was because none of my local markets carried them. Now they're stocked all the time and I use them often. I use them in soups, stews, and my personal favorite: a big tray of oven-roasted root veggies.

I put them in soups. On their own I'd rather eat other root vegetables.
They're a meme vegetable in my area of leafistan, they cost significantly more than carrots whenever I rarely encounter them

I never really had one (that I could identify out of whatever other ingredients) before a few weeks ago.
I've been roasting vegetables for every meal and my local grocery had some loose so I bought one on a whim.
Now I'm fucking addicted to them and I have to have them every fucking night, and every bite of another veg has to have a slice of parsnip on the fork with it.
I wish I was kidding because that sounds gay as fuck.. but sadly I am not.
I don't care that they're fucking retardedly overpriced. They taste fucking awesome roasted with my special spice blend.
I suppose they're ok to use if I don't have and carrot or turnip laying around, other than that they're pretty bland.
My grocery store doesn't carry them.
I sometimes buy a mix of root vegetables with parsnip, carrots, celeriac, beets, onions. Chop into big chunks, drizzle with a little olive oil, some thyme. In oven.
Great as sidedish.
