From the Caymans, I give you affectionately yet singularly called "Nigga Bible" which is a amazingly good bread-cake often on breakfast or brunch tables if you are somewhere that homecooking by real caymanians happens. I liken as a cross between banana bread and spice cake. It has the moistness of a good banana bread, a slight hint of spice and some tropical coconut milk goodness yet is a quick bread.
