Made some pasta today. pan on medium-high, olive oil then sweated down some diced onion. added in broccoli chunks and sliced chicken thigh, kept it going on high and let the chicken stick to the pan and brown up. Added a good amount of sliced baby portabella mushroom, scraped the pan as they released moisture to release the fond, also added garlic here. Once the moisture was more or less gone I added wine, turn up heat and cook out alcohol and evaporate some volume. add half and half before all the wine's gone, tested for salt, added a pretty small amount of italian seasoning because I found it before the oregano, black pepper, added a pad of butter to thicken the sauce and bring it all together.

I'm not OP, but I've cooked chicken thighs like that many times. That color comes purely from the smoke. OP might have seasoned them with something simple like salt and pepper, but there doesn't appear to be any sauce or anything on there. It's just basic indirect-heat grilling with some wood added for smoke. You can see the coals off to the side (instead of under the chicken), and the chunk of wood on top of the coals for the smoke.

Crispy skin is easy. Dry the skin, coat with a little oil. Apply heat.

The amount of heat is critical. Too much heat means that the skin will burn before all the fat renders out. Too little heat won't crisp.

Afriad I don't have any pics for it as it's already in the freezer, but I made a pretty good Catalan Fideos today. Braised pork cheeks browned with onion, lots of garlic and leeks, a heavy dose of smoked paprika, morcilla and pata negra. Add in some chopped beef tomatoes, then some pork/veal stock if you have it, if not chicken works too. Bring to boil, add in some trofie pasta, boil till cooked, serve. It was really tasty, the pork cheeks definitely made a huge difference as opposed to the relatively bland loin that I normally use.

Anyone else ever made Fideos? I'd like to hear other takes on the recipe.

Just made my first batch of pancakes ever, all from scratch. They're peanut butter with chocolate chips.
First ever, because I don't really like pancakes all that much. Then I got pretty stoned and basically challenged myself to see if I could even make them. Flips were rough but they turned out decent enough and they taste incredible. I've topped them with melted peanut butter and a touch of syrup. Best thing I've ever tasted, holy shit. Will have to make again later

I love pancakes. Try Martha Stewart's buttermilk pancake recipe. Cut it in half if you're only making them for yourself since it's a ton. But so worth it. Yours look nice too, maybe a little too doughy for me

And there we go. Fuck cutting some cilantro because the rest of the people who were going to eat decided to stop and eat something before getting here and not saying anything. That's fine it will probably be better in a day or so anyways.

Over all it was ok. If you take it as the face value of a quick to do recipe it was ok. I would make it a little spicier but was making it for some people who would have bitched about it.

I feel like you could get a lot more depth of flavor by roasting the chili first and possibly browning the pork. I like to do one by the numbers first just so have a base line for tweaking it.

There are stovetop ones you can do canning with. I don't know if any of the electric ones get up to high enough pressure or are big enough to do pressure canning. Grabbed the IP when it was on a pretty big sale at amazon. Pretty good at cranking out soups/stews/stock.

Serving suggestion was for tortillas, I just had a bowl of it like soup because it was pretty runny. Nothing some more reducing couldn't fix. Pretty good over rice/whatever too.
