I made poached eggs for the first time. Turned out okay. They were a bit overdone but that didn't stop me from enjoying them.
They look nice.
I just make them in a cup in the microwave, no need to bother with boiling water or adding vinegar etc. They come out perfect every time.

How to?

>take off heat and get it lower to a simmer

What's your timings? Microwave temps are even less consistent than boiling water, but for some reason every single time I've tried to poach eggs the whites immediately separate from the yolk before I even start.
But I also can't cook softboiled eggs. This week I've been trying boiling them for longer and longer. I'm at seven minutes and the whites are still liquid enough it falls apart peeling.

OP here. This is how I did it: 1 1/2 inch of water in a sauce pan. Heat until simmering. Add tbsp of vinegar (you can skip this). Drop eggs in and remove from heat. Cover and let stand for 4:30. Remove with slotted spoon (I used a pasta spoon.
