You push the work through slowly. And if you're doing precision work that requires you getting close to the blade you move very, very, slowly.

Though ideally you wouldn't get your fingers anywhere near the blade; that's what tools like push-sticks are for.

I'm well aware that kickback is a risk with table saws. In fact, I had a very close call with kickback years ago; the saw threw back a very heavy board (about 2" thick, 4' x 2') at me and I barely dodged it.

But that said, one of the reasons I use push sticks is simply to keep my hands/fingers further away from the blade. It never hurts to minimize risk. Even if kickback didn't exist I would still use push sticks/blocks for that simple reason.

You use the push stick to apply forward pressure towards the blade, and then you use your other hand elsewhere on the workpiece (either beside or behind the blade) to control the angle/direction that you're cutting. Of course if the workpiece is large enough that your fingers are a good distance away from the blade then the push stick isn't needed.

Not that guy, but cutting meat with a bandsaw is quite different from making intricate cuts in wood - meat is oddly shaped, slippery, cold, and when you cut meat on a bandsaw there's a good chance you're standing on a slippery floor in a noisy, crowded, cold room, so there's huge potential for distraction.
