When I was a wee lad, this Mexican woman who was friends with my mom cooked some sort of potato and eggs dish where the eggs and potatoes were cooked together.
Anyone have any idea what that might be, or is just eggs cooked with potatoes an actual thing? I saw some recipes involving chorizo as well. I can't remember that well if this dish had chorizo or not.

Are you sure it wasn't one of my favorite things called chilaquiles verdes con huevos? It's a big mess of deliciousness. Maybe in your spotty memory it seemed just like it was 1) breakfasty 2) potatoes but it wasn't. It was just really good.
P.S. Sauteeing some highly spiced chorizo to flavor your breakfast eggs, or potatoes isn't uncommon. It'd be right out Spain to do a tortilla in a casserole, though, and would remind you of a quiche that was sliceable.
