Put tomato, olives, and whatever other italian or greek toppings you want into a big portabella mushroom cap, it's like a pizza but with mushroom instead of carb-filed crust.
I had baked chicken reuben recently. Thousand island dressing's probably fatty, but just using a tiny bit would still taste great.
Throw broth, veggies, and a bunch of seasonings into a crockpot. Almost impossible to fuck up unless you add something obviously retarded.
There's some things I had recently that should be interesting and aren't unhealthy.

Cut broccoli into bite size florets. Save the stems.
Dice red bell peppers.
Dice a bit of onion (or use onion powder)
Group baby spinach leaves on top of each other, cut off stems and cut leaves in half
Smash a garlic clove.
On medium low heat, add oil when PAN HOT. Add broccoli stems, cook a few minutes, add everything else but spinach. Cook a few minutes. Add spinach and peeled garlic clove. Salt and pepper generously. Add a bit of butter now if you wish. Sprinkle grated Parmesan now, if you wish. Serve with a bit of EVOO.

Depends how long you have it in the water.
Personally 4 minutes is when it's ready but will be runny which I like especially with some lightly buttered spinach.
