There's a reason "chicken" is the generic meat taste. I think it was bacteria related? That said, snake has a tougher texture in my experience. Alligator is like that too.
I've never eaten snake before but I was once massaged using snake oil. It smells really weird so I don't think it will taste like chicken.

Snek is a very good meat for smoking; it absorbs flavor well and develops a soft jerky texture.
On its own (if you simply fried or baked it), it's a bit like a mild frog in flavor but with the texture of a chewey fish. "Chicken" isn't really the right analogy, but it's not all that far away I guess.
I've never had snake but I've had croc and some kind of big lizard. They were both like overcooked chicken but I think they were also both probably overcooked.
