I make spicy crab rolls at home every now and then. I want to make actual raw sushi but i don't know how to prepare/find sushi grade salmon.

If there's anything different it's that nearly all sushi fish has been frozen to around -20-40 degrees Fahrenheit to kill most/all pathogens

Same here. It looked so easy watching the guys at Morimoto. Things turned out differently than I expected. I mangled a lot of expensive fish and I got rice all over my hands. All those people who shitpost about sushi is "just some raw fish on rice" should try it themselves and be humbled
