Pureeing them into chocolate batter for a non-food coloring based red velvet cake.
Wrap them in alfoil and shove them in the oven. The outer skin should slough right off when they're cooked and you can do literally anything with them afterwards.

I steam them, then cut them into chunks. I throw them in salads but they're fine on their own.
