By all means, chow mein noodles are the best for this sort of stir fry. I'd suggest you use a bit of Shaoxing rice wine for added flavor.
(Make sure you get the actual wine, not the bullshit "salted/flavored one, unless you want to end up buried in the sands of egypt.)

Get some kencur, aka sandginger/ chinese ginger. (Dictionary just gives you like 8 different names for it, idk what it is in engrish)
I'd use limes instead of lemons if I were you
also, if you don't hate califlower, you can add that.
Try egg, fresh peas. Stir some peanut butter in coconut milk and sprincle salted peanits all over that mf for crunchie peanut goodness.
Beef broth with curry paste and some coconut milk make for a good ramen broth...
