After 3 months in mexico i really miss chicken.
They have it here but the chickens are tiny and expensive.
Cost more the have chicken in baja than pork, beef ,or even fresh fish and shrim.

Depends on what I'm having it with.

Chicken for salads, roasts, etc.
Beef for pastas, pizzas, burgers, or as steak.

Have trouble finding lamb and goat meat as well even though i see goats everywhere.
Its not crazy expensive, just more than you would think.

Chicken is more versatile but good beef is better than good chicken
