Theyre the same price as chefs knives. I cook a lot of vegetables so a smaller zippier precise knife appeals to me rather than an upgraded chefs knife

There is one thing a santoku really does better than a chef's knife, and that is finely dicing onions. I have a $6 one that I bought out of curiosity, but I'd never spend really good money on one. I think they look just ugly, not like a knife should. Just like nakiris or Chinese cleavers

Got a santoku with my knife set. Pretty good for vegetable prep, but I usually just use my chef's knife because I don't want to wash multiple on account of me being a lazy faggot.
