Everyone says you need to add flour and corn starch and club soda or beer to get a good batter.

Why wouldn't corn starch and egg whites work? That's my go-to.

Onion rings need to prove themselves before I will order them. They indeed are tricky to get right, and is so very rare to get good ones. When they're good, they are great, but so often its a limp greasy shell of breading, and the first bite pulls the entire slimy onion out in one piece.
Like most foods, its all in the execution. Fries are a much safer choice.

Harvey's, a Canadian burger chain, sells "Frings" - half onion rings, half fries portions.

A good compromise.
