Seriously, that's waaaaaay too big a menu for burgers.
Not that most of the things on the menu aren't good, but when people go out to eat, they don't want to be stressed out by having too many flavorful options. It's not a "good restaurant" thing.
All that said, I would do a medium rare beef, on a brioche bun, with pepper jack, avocado mash, fried dill pickles, sprouts, grilled onions, arugula, tomatoes, blue cheese dressing, and franks red hot.

Yeah, history shows that large menus don't get well. Overreaching is a sure way to fail. Why did the Mongolian Empire fall? They kept focusing on expansion rather than making sure they were internally sound.

We used to have The Counter here, but it closed after not getting enough business. Probably for the same reason as others posted, no one likes to have to debate every ingredient of their dinner before ordering.
I remember when it opened, and we went a few times. They did great fucking business at first, got great reviews (their cooking wasn't the problem), but their customers dwindled off to the point they had to close. No one wants to sit and spend half an hour deciding what to have on a burger. It's a restaurant for strict autists. Can you imagine the effect this place would have on someone with OCD?
Sounds good to me. Might be too much meat though.
