Lenten fasting was a thing back in the day for Catholics. (Still is for Greek Orthodox). Today observant Catholics can just eat a fillet-o-fish on Friday and feel like they've done their bit. Back in the day people fasted and abstained from doing pretty much anything fun for Lent, which begins on Ash Wednesday. So in Catholic cultures the Tuesday before that was traditionally a blow out party. In NOLA the French Mardi Gras traditions got interwoven with Latin Caribbean Carnival traditions and the pretty uniquely African American Mardi Gras Indian thing. The result is not just a crazy party, but a deep cultural mash up that only exists in New Orleans.

I baked that one on Sunday, sent family home with some. Ate the last slice for breakfast this morning. Feels sad... I live in Georgia, baking my own is the only way to get a good king cake over here.

I'm good though. I made a huge batch of red beans and they'll keep me company through the week.

The king cake is easy to get minus the tooth-breaker plastic baby in there. It's simply a danish ring. And, I think I always see moon pies at Wal-mart. Have you looked good?

A proper king cake is so much more than a danish. The reason I have to bake my own is because all the ones around me are just fucking cheese danishes with purple, green, and gold icing.

The one i make >>8630530 is filled with cinamon, lemon and orange zest and topped with a vanilla/lemon icing. it is the most honest reproduction to the classic/traditional gambino's, mckenzie's, and randazzo's king cakes of my child hood.

Closer to a cinamon roll than a danish. Somewhere in the late 80s eveyrone started making cheese cake filling and strawberry filling and apple cinamon and lemon and chocolate... and thats ALL BULLSHIT.

The other thing that happened was that everyone started making non-braided cheaper cakes and most poor people started purchasing those. Very few bakeries still make the fully braided ones and they cost about 80 bucks but are totally worth it. Sad to see the king cake of my childhood fading..

Basically, Louisiana is like spot on to vietnam's climate. The Vietnamese made their home here, subsequently we have probably one of the most authentic Vietnamese food cultures here. They are quite revered.

They're a little highbrow for me, but no doubt their stuff is great. I feel the same way about Bacchanal. Great places to drop some dough. I just find it hard to feel like dropping some dough when two pieces of fried chicken at Hank's is a dollar and a decent meal at Melba's is so cheap.
