Former morning chef at hotel here. Using fresh eggs makes it very fluffy and harder to burn if your not fucking retarded. Using a carton of egg will make cooking faster but the results will be less fluffy and will cook much faster. Pan fry your ingredients before adding whatever egg your using. Always cook on medium or medium-high heat. If your adding cheese save it for the end and put a cover and some water in your pan to melt the cheese. Smoked chicken, green onions, tomatos, and feta cheese is a great combo.
Other Anon is correct. Feta and tomato are the absolute best omelette toppings. Cheddar and ham are memes.

Don't let it get too browned. If your pan to egg ratio is off in favor of eggs, just get a spatula and lift the edge of the omelette and tilt the pan until the runny eggs go underneath. They'll cook just about instantly, then you can flip. For whatever reason, browning on omelettes triggers people (particularly on /ck/) so badly, and I don't know why because a country style omelette (read: the only actual omelette) is supposed to be slightly browned in places.
Pan sear all veggies but NOT herbs OR SPINACH prior to putting them on the omelette.
Don't mix the veggies into the omelette first, you should place them gently onto one half of the thing after you flip it. Cheese you can be a bit more experimental with, but you want to put it evenly around the omelette. If you are a lardass who loves fried cheese, mix in a tiny amount with the eggs, it gives the omelette a nice toasty feel. Fold over the veggies and then serve.
Use this method, it's almost impossible to fuck it up.
