I don't see any cheese either.

I'm honestly surprised Mac and Cheese soup isn't a thing. It's Broccoli Cheddar but for people who are even more emotionally stunted that they think a bowl of liquid cheese can qualify as a meal.

Speak of, here's the best recipe for cheese soup:

Apple Cheddar Soup:

¼ cup butter
1 large sweet potato, peeled and cut into ¼-inch cubes
½ large onion, chopped
5 cooking apples, peeled, cored and coarsely chopped
½ cup milk
¼ teaspoon ground nutmeg
1/8 teaspoon cayenne pepper
¼ cup all-purpose flour
5 cups chicken broth
1 teaspoon salt
1 cup shredded Cheddar cheese
Garnish optional

In large, heavy-bottomed saucepan, melt butter over medium heat. Add potato and onion; cook until potato is tender, 8 to 10 minutes. Meanwhile, in food processor puree together 5 apples, milk, nutmeg and cayenne. Stir flour into sweet potato mixture; cook, stirring, 1 minute. Stir in chicken broth, salt and apple puree. Bring to a boil over high heat; boil 2 minutes, stirring constantly. Working in batches, puree soup in food processor until very smooth. Return to saucepan. Whisk in cheese unitl melted. Garnish as desired, with chopped chives, or chopped apple, or roasted apple and shredded cheese, etc.
(Note: you can add more cheese than that, depending on how thick and cheesy you want your soup.)
