mcintosh apples are for juicing/eating (sorta like valencia oranges)
you're better off going with a firmer, more tart apple like granny smiths or gala

they don't all need to be the same

Rome, Golden Delicious, and I think Braeburn are supposed to be best at holding their shape after cooking. Ask yourself whether you want a chunky or a smooth filling. Granny Smith has nice flavour but turns to absolute mush. Maybe do a mix?
Bramley apple is best for cooking although hard to get outside the UK.
Some recipes call for a mix if cooking and eating apples for flavor and texture.

Personally I like golden delicious, but red delicious is also fine. Big macintosh are for more tough desserts, though when combined with pic related and some floral garnish they taste awesome.
Alternatively, just have apple cinnamon crisp. It's easier.
