What are your favorite veggie combos and seasonings?
I just had some broccoli, carrots, brussels sprouts, and zucchini, with olive oil, salt, pepper, garlic and onion powder, and thyme. It was great.
Post whatever you want, but I'm mainly looking for simple ones. Everything I find online is either "just salt and pepper" or way too complicated.

Chickpeas, garlic, rosemary, salt, black pepper, and olive oil.

I LOVE mushrooms. Mushrooms sautéed in some butter, minced garlic, and wine (white wine or merlot both can work depending on what you pair it with).
Sautéed or grilled or roasted zucchini with salt and pepper, garlic (or granulated garlic), and/or seasoning salt. Lemon pepper seasoning is also decent with zucchini.
Seasoning salt with... Anything - is a cheap white person meal.
Roasting or grilling (or sautéing) bell peppers - especially sweet red, yellow, or orange ones - and zucchini or yellow squash, onions, mushrooms, maybe broccoli - with minced garlic, or even garlic, ginger, and a dash of soy sauce.

broccoli, sweet potatoes, cauliflower, red onions, and chickpeas (not a veg, i know, but delicious roasted), tossed with olive oil, thyme, cayenne/old bay, and nutritional yeast. i make it once a week, and it's delicious.

I like roasting cauliflower with salt, pepper, olive oil, lemon juice and paprika
Brussel sprouts, chopped onion, salt, pepper, garlic powder, olive oil. Bake at 375F for 30-35 mins

Drizzle of vinegar (balsamic or what evs) helps bring out the sweetness of the veggies, helps them shits caramalize all tastey like.
Fav roast vege is sweet potato, some smoked paprika on those bad boys is the fucking bomb diggidy holy moly
Onions, red potatoes, and cabbage, with butter, salt, garlic, fresh parsley, and basil
It's amazing.
Sliced onions, sweet peppers, mushrooms, and diced tomatoes tossed in olive oil, with garlic, salt, and parmesan cheese.
Eat it over rice cooked in chicken broth.
You can also sautee them instead of roasting and then cook it in some broth until it breaks down a bit and turns into a chunky sauce, and have it over rice or some spagetti squash.
