I bought a loaf of bread from a local bakery yesterday. When I sliced it open and smelled it, I was immediately transported back to grade school, where we once baked bread in class.
What was it that I was smelling? Yeast?

Most likely it's the yeast. Typically when people make bread at home or at school they use a huge amount of yeast because they don't want to wait for much more than one or two hours for the bread to rise. This produces an inferior flavor compared to bread fermented slowly and has a noticeable "yeasty" aroma.

Just as some beer has a lot of hops, so does some bread have a lot of yeast. It doesn't necessarily mean it's "inferior".
