Did some steps ahead of time but took pics which I'll post. Brined some no solution added chicken legs for 6 hours with 2 quarts water, 1/2 cup kosher salt, 1/2 cup brown sugar and 3 cloves garlic. Then I rinsed and started what follows.

This was last years batch, which I did with a vinegar brine. But for next year, I have a batch that I fermented based on a thread by a really based fermenting anon here, on /ck/, of all places.
