A german-style potato soup my mom always made while I was growing up. Red potatoes, lots of onion and celery, and 'seasoning ham' in milk. Extra points for excessive black pepper.
More of a stew guy but for soup I'd have to go with pic related for #1, and vichyssoise for their pure tasty simplicity and elegance. A good homemade chicken noodle won't get thrown off the table either.

Caldo verde is tits. Made this a couple of weeks ago. I can't get the proper sausage here in the states but a smoky polish kielbasa worked out well. Definitely will remain on rotation this winter.

Soups are the best part of polish cuisine. I love most of it. But the best ones are the chrismass red borsch and żurek. Two true ubersoups.
