They're cured and smoked. Meaning that you can use them for flavor in soups, cooking beans, Southern greens as another has mentioned in this thread, etc. Also some people just eat them.

Shit yes. They're delicious as-is. They're also great for tossing into a pot of beans, greens, or soup. They contain a lot of connective tissue so they create a really rich stock.
