You need to thourgohly clean the chicken with something like some thinner or acetone first.
Then use a fine grit sandpaper to get proper batter to chicken adhesion.

You should also keep your batter in a metal bowl and set that bowl inside of another larger bowl that's filled with icewater. It should be really fucking cold. This will help the batter stick better.
