I like to top them with an inverted Australian rubbish bin.
I add chopped bacon and mix in butter, salt, and pepper

I like to have two packets of grits. I put in the microwave with two cheese singles. Meanwhile I cook 12oz of liquid egg whites on skillet, sprinkled with cheese flavouring. When it's all done I dump the lot into a big bowl, mix it up and eat with a milky coffee to drink

Ground hominy. Polenta is head and shoulders preferred by anyone not certifiable as white trash.

I'm not big on sweets, so I always use it with a braised meat and sauce. I'll also spread out the leftovers, let it setup in the refrigerator, cut into squares and fry in EVOO to form a crust on it. Mario Batali and Lidia Bastianich have good recipes for it.
