What food did you not warm up to until later in life?

potatoes that were anything but fried. I didn't like them mashed, baked, or anything else until I was sixteen. Now I can't get enough of them.
pineapple and coconut. I hated them as a kid but as an adult I can appreciate the natural sweetness.

I found mayonnaise tolerable until I hit adulthood. It's not that I hate it now, I just never see a reason to use it outside macaroni/potato salad.
Onions, oysters, mushrooms.
Not quite the same thing but I developed a shellfish allergy at 7 which just went away around when I hit 16 or so
Asparagus.

Tomatoes
Broccoli. I didn't particularly dislike it as a kid, but I wasn't fond of it. One day I was eating pasta and was struck by this profound desire for steamed broccoli. Now I fucking love broccoli.
Acorn squash.
When I was a kid, my parents always made acorn squash roasted full of butter, brown sugar, and cinnamon. I fucking HATED it. I avoided it like the plague until I was in my mid twenties and had my own place, and I decided to try making savory roasted acorn squash, and it was fucking delicious. I've never liked winter squashes or sweet potatoes with any of that sweet shit on them. Go savory or go home.

Besides the standard childhood aversions to bitter foods (coffee, overcooked greens) and pungent foods (smoked/peppered meats, strong cheeses, raw onions, etc.), I didn't really miss out on much in my younger years.
I learned pretty early on that the ingredients don't matter nearly as much as the preparation.
