Tarka dhal with rice is pretty great. It's high in (complete) protein, and obscenely cheap.

I've picked up pallets of this stuff from the source where it's made in Ferndale for my job. Even gotten a bunch of free samples.
It's decent. Rehydrates well too.
I used to make noodles with cottage cheese, salt, pepper and onions sautéed in butter. I don't know what you'd substitute for the butter since I'm not a faggot but that's a good place to start.
